I used to sell advertising, until I realised I should be on the land growing stuff. I then attended Schumacher college in Devon and met a guy, John Letts, who lectured us on heritage wheat and how it was illegal (well sort of) - seen as wheat seed and growing is controlled by agri-business. This led me to work at the Almond Thief bakery, with the amazing Dan Mifsud and the band of beard stroking, hip swinging bakers and coffee makers. Ben from E5 bakery, what a legend, lent me his mill, and I started milling little bits of grain and proving that locally grown and milled grain could make great bread - in the Tartine mould. Then I moved the operation out to its own premises in Buckfastleigh and teamed up with Hylsten bakery - thats when I truly started to see what the business could become and other people started to see it too.
