Andrew Gilhespy was inspired to create the Fresh Flour Company and our delicious range of flours, pastas, noodles, crackers and biscuits, after attending Schumacher College and being mentored by some of the UK’s most visionary artisan millers and bakers.

Our philosophy is very simple. We only use English heritage and ancient wheats. We work in partnership with organic farmers, or farmers who don’t spray. We pay them fairly and realistically. We mill the grains they grow into flour on our premises. We make all of our own products. We only use other ethically sourced, natural ingredients.

The result is an amazing range of foods that you will find a joy to explore.

Hand-made Pasta and Noodles

All our pasta is milled and made by us in Devon, using stone ground UK wheat and filtered Dartmoor water. Mixed together in our pasta machines, it is shaped and cut using bronze dies. The result is a food that is both traditional and yet cutting-edge contemporary and with a remarkable taste.

Sourdough crackers

Our crackers are made with the same Fresh Flours; ancient and interesting, mixed with the finest of other ingredients - Kadode Kampot Pepper (The Fermented Green Pepper won the Golden Fork at the UK taste awards 2019), Totnes Honey, and Greek Extra Virgin Olive Oil.

Sourdough Digestives

These biscuit recipes were given to us by a brilliant Chef and friend of ours, Zak, we think they are the best digestives there have ever been. We use our flours, we toast some of our grain and then mill it - bosh that in - mix it with a lot of sourdough, then add two types of sugar, organic granulated, and organic palm flower - adding a caramel hint - local riverford or ticklemore butter, a little bicarb, baking powder and a taste of Devon sea salt. They are what a digestive should be like.

The chocolate version is all that and more. We mill the cacao husks with the grain, creating a chocolate flour!

Flours and Grains

We sell our flours in 25kg sacks, but are happy to supply smaller bags and 1kg samples.

Emmer
Emmer wheat is an ancient cultivated grain. Its older than Spelt and has complex tastes and higher nutritional qualities than most modern wheats. It also makes fantastic pasta. We grew our 2021 harvest, on the Dartington Estate. More . . .

Einkorn
Einkorn is the oldest wheat cultivated by humans. Its another highly nutritional grain that our bodies love. The harvest we use is grown naturally on the beautiful Dartington Estate with the amazing Jon and Lyn Perkins, who between them they have over 50 years of organic grain growing experience. Strong bread flours
We have a number of flours suitable for making bread - Mulika, Red Lammas, Olands and Atle. These changes regularly thoughout the year according to availability.

Heritage flours
Our heritage range changes as the seasons and year roles on. Millers choice, Red Lammas, April Bearded and maris wigeon are our particular favourites.

Rye
Brilliant Rye flour milled wholegrain - soft and flavourful.
