Miso Ramen

Making Ramen soup can be a lengthy business. If you want to spend 48 hours making your broth (as we sometimes do) then please go for it... but here’s something that you can make in minutes and it will still be full of rich, comforting goodness.

Making Ramen soup can be a lengthy business. If you want to spend 48 hours making your broth (as we sometimes do) then please go for it... but here’s something that you can make in minutes and it will still be full of rich, comforting goodness.

To make super quick miso ramen, fry up some garlic, spring onions, ginger and shiitake mushrooms (you can use other mushrooms if you can’t find shiitake).

Add Dashi (you could use other stock but you won’t get that complex umami hit!). Add a spoonful of miso paste and a dash of soy sauce.

Cook your Fresh Flour Ramen noodles, give them a rinse then add everything to a bowl.

Garnish with whatever you fancy. We use some fresh greens, toasted sesame seeds, a tea-pickled egg and fresh coriander… Enjoy!

Reginette with anchovies, capers and garlic

Our Reginette is made with around 20% wholemeal flour (like all our flour, it’s freshly stone ground here in our south devon mill). That, along with being extruded through a bronze die, gives it a delicious flavour and texture which means you don’t need to add lots of sauce.

This recipe takes about 10 mins in total (if that). It tastes incredible!


In a mortar and pestle (or food blender/mixer) add a few anchovies and as much garlic as you want. Blend it all up with some good olive oil.

Get your Fresh Flour Company Reginette on to boil in lots of salted water.

Fry the anchovy/garlic paste in a pan (you may want to add a bit more olive oil).

After a couple of minutes add a couple of tablespoons of capers. They will sizzle nicely!

Add a bit of the pasta water from the cooking Reginette and stir to emulsify the sauce.

When the pasta is ready (leave it al dente as it will continue to cook), add it straight to the pan with the sauce and mix. You will probably need to add more pasta water at this point as the Reginette will start to absorb the sauce.

Serve straight away with some more olive oil and lots of black pepper.

This is delicious as it is but you could use it as a starting point for lots of other flavours. Adding fresh parsley, chili and lemon would be perfect…

Quick Satay Ramen

This is a quick and easy recipe that goes really well with our unique UK made Ramen. This can be served hot or cold (cold is great on a hot summer day).

This is a quick and easy recipe that goes really well with our unique UK made Ramen. This can be served hot or cold (cold is great on a hot summer day).


For the sauce:

1 tablespoon of peanut butter

1 tablespoon of soya sauce (or Tamari)

1 dessert spoon of toasted sesame oil

1 teaspoon of Honey (or other sweetener. Can be left out if you prefer)

1 teaspoon of fresh grated ginger

1 or 2 tablespoons of the Ramen cooking water to loosen the sauce


For the Garnish:

Spring onions

Fresh chili

Mix all the sauce ingredients together in a bowl.

Cook Fresh Flour Ramen as per instructions on the packet.

Rinse well before serving in a bowl.

Add the sauce and mix well.

Garnish with chopped spring onions and fresh chili.

To make a more substantial meal you could add grilled tofu, chicken or salmon.
